# Directions:

01 - Arrange bread slices on a flat surface and gently flatten with a rolling pin.
02 - Combine cream cheese, mayonnaise, and Dijon mustard in a small bowl until smooth.
03 - Spread a thin layer of the cream cheese mixture evenly over each bread slice.
04 - Place one slice each of turkey, ham, Swiss cheese, and cheddar cheese onto each bread slice.
05 - Top the meats and cheeses with a few baby spinach leaves and thin slices of red bell pepper.
06 - Starting from one edge, tightly roll up each bread slice into a log.
07 - Trim the ends of each roll, then slice each roll into three equal pieces.
08 - Use a small star-shaped cookie cutter to cut each slice into a star shape.
09 - Place star-shaped roll-ups on a serving platter and garnish with chopped parsley, if desired.
