# Ingredient List:

01 - 1½ cups mixed olives (green and black, pitted)
02 - 7 oz feta cheese, cut into 1 cm cubes

→ Marinade

03 - 3 tbsp extra virgin olive oil
04 - 1 tbsp freshly squeezed lemon juice
05 - 1 tsp dried oregano
06 - 1 tsp fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - ½ tsp red pepper flakes (optional)
09 - Freshly ground black pepper, to taste

→ Garnish

10 - 2 tbsp fresh parsley, chopped
11 - Zest of ½ lemon

# Directions:

01 - Place mixed olives and feta cubes in a medium bowl and gently mix.
02 - In a small bowl, whisk together olive oil, lemon juice, oregano, thyme (if using), garlic, red pepper flakes, and black pepper until blended.
03 - Pour the marinade over the olives and feta, then gently toss to coat thoroughly without breaking the cheese.
04 - Cover the mixture and refrigerate for at least 30 minutes or up to 4 hours to develop flavors.
05 - Bring to room temperature before serving, sprinkle with chopped parsley and lemon zest, then toss lightly and serve.
