# Ingredient List:

→ Oats Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup milk (dairy or plant-based)
03 - 1/2 cup plain Greek yogurt
04 - 2 tbsp maple syrup or honey
05 - 1/2 tsp vanilla extract

→ Carrot Cake Mix-Ins

06 - 3/4 cup finely grated carrot (about 2 small carrots)
07 - 1/2 tsp ground cinnamon
08 - 1/8 tsp ground nutmeg
09 - 1/8 tsp ground ginger
10 - 1/4 cup chopped walnuts
11 - 2 tbsp raisins (optional)
12 - Pinch of salt

→ Toppings (optional)

13 - Additional chopped walnuts (optional)
14 - Shredded coconut (optional)
15 - Maple syrup, for drizzling (optional)
16 - Dollop of Greek yogurt (optional)

# Directions:

01 - In a medium bowl or two 16-ounce jars, stir together 1 cup rolled oats, 1 cup milk, 1/2 cup plain Greek yogurt, 2 tbsp maple syrup (or honey) and 1/2 tsp vanilla until evenly mixed.
02 - Fold in 3/4 cup finely grated carrot, 1/2 tsp ground cinnamon, 1/8 tsp ground nutmeg, 1/8 tsp ground ginger, 1/4 cup chopped walnuts, 2 tbsp raisins (if using) and a pinch of salt until evenly distributed.
03 - Divide the mixture evenly between the two jars or containers, pressing lightly to level the surface.
04 - Seal the containers and refrigerate for at least 8 hours (overnight) to allow the oats to soften and the flavors to meld.
05 - In the morning, stir the oats; if a looser consistency is desired, add a splash of milk and stir to combine.
06 - Top each serving with additional chopped walnuts, shredded coconut, a drizzle of maple syrup or a spoonful of Greek yogurt as desired; serve chilled.

# Expert Tips:

01 -
  • This is one of those rare breakfasts that feels like a treat but secretly packs in veggies and protein.
  • No morning rush needed—just grab your chilled oats straight from the fridge and enjoy.
02 -
  • Once I grated the carrots too coarsely and they stayed stubbornly crunchy—fine grating is essential.
  • Using slightly warm maple syrup as a topping makes each bite taste extra indulgent, almost like icing.
03 -
  • Let the oats sit at room temperature for 10 minutes before eating to take the chill off and boost the flavors.
  • A small pinch of salt in the oats mix is the real secret for making every flavor pop.
